金澤料亭の基本的条件

Kanazawa Ryotei continue to protect the traditional food culture, elegance, feeling, and form of the region.

Basic Criteria of Kanazawa Ryotei:

1. Value the culture of etiquette prevalent in daily life.
   • A place deeply connected with tea ceremony through hatsugama (first tea ceremony of the new year) and chakaiseki (simple meal eaten before tea is served).
   • A place of important ceremonial occasions (tea ceremony-style wedding, traditional customs of Kanazawa).
2. Intended for various spatial uses.
   • Hospitality which makes use of traditional Japanese architecture and Japanese-style rooms.
   • A carefully maintained Japanese garden with Kanazawa's unique yukitsuri (ropes strung conically from the tops of trees to protect them from heavy snow loads).
3. Foment an aesthetic sense representative of Kanazawa.
   • Interior decorated with historic antiques, paintings, and calligraphy, as well as ikebana flower arrangements.
   • Provide a place for Kanazawa's geisha to exhibit their craft and practice hospitality.
4. Be a gathering place for food and techniques.
   • Serve food by chefs who have acquired the techniques of Kaga cuisine.
